Chicken Burrito Recipe

Slightly spiced chicken in soft tortilla

Serves 4 People

Ingredients (Makes 4 burritos):
500g chicken breast or thighs, cut into strips
1 tbsp olive oil
1 small onion, sliced
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1 tsp chili powder
Salt and pepper
4 large flour tortillas
1 cup cooked rice
1 cup black beans (rinsed and drained)
1 cup shredded cheese (cheddar or Mexican blend)
½ cup mexi-mikes salsa or pico de gallo
½ cup sour cream (optional)
Fresh coriander, to garnish

Instructions

Cooking Time: 20 Minutes

Instructions: Cook the onion and garlic: Heat oil in a pan over medium heat. Sauté onion for 3 minutes, add garlic, cook 30 seconds. Brown the beef: Add beef mince, break it up with a spoon, and cook until fully browned (about 6–7 minutes). Add spices: Stir in chili powder, paprika, cumin, cayenne (if using), salt, and pepper. Cook 2–3 minutes more. Heat taco shells: Warm taco shells in the oven (180°C/350°F) for 5 minutes or as per packet directions. Assemble tacos: Fill each shell with beef, then top with lettuce, tomato, cheese, sour cream, and coriander.
