Ingredients (Makes about 2 cups):
4 ripe tomatoes
2 fresh chilies (jalapeño or serrano, adjust to taste)
½ small onion, chopped
2 garlic cloves, peeled
½ cup fresh coriander leaves
Juice of 1 lime
Salt, to taste

Cooking Time: 10 Minutes
Roast the vegetables:
Place tomatoes, chilies, onion, and garlic in a dry pan over medium heat (or under the oven grill). Cook until charred and softened, turning occasionally, about 8 to 10 minutes.
Blend:
Add roasted vegetables to a blender with coriander, lime juice, and salt. Blend until smooth or slightly chunky, depending on preference.
Adjust and serve:
Taste and add more lime or salt if needed. Serve fresh with tacos, burritos, or tortilla chips.
